MCM is collaborative and partnership as brand by Pearl of Tehama and Alhussaini corporation for producing and export Yemen coffee .

Our Mission

At Mocha Crown Coffee , it’s our mission to source and deliver high-quality of Yemeni Mocha specialty green coffee to the whole world and supply chain to source the finest coffees and bring increased choices to our customers; and to offer our customers superior logistics, marketing expertise .

Our decades of experience in green coffee have also shown in helping to ensure a healthy future for specialty coffee. So it’s also our mission to seek out, build, support and foster sustainable relationships—with our Importers , our customers, our communities and the environment.

Establishing the consulting office:

Mocha Crown is known, through previous experience that one of the most important reasons for the inability to attract more demands is the inability to develop skills, the full knowledge of the requirements of external markets, the convoy of the current developments in the coffee sector and what is required by the coffee export process at higher levels. Therefore Mocha Crown has established consulting office for coffee project with the aim of developing the process of exporting Yemeni coffee in the future and raising the level of demand for it by foreign markets.

In light of this, multi-disciplinary team related to the most important aspects of the coffee production and export sector has been appointed and a team leader (who is the company’s technical director) has been assigned. Many tasks that have contributed significantly to the development of the work have been assigned to them.

Among the most important achievements of the consulting office and its multi-disciplinary team are the following:

  • Preparing good informational materials for marketing coffee,
  • Preparing technical reports on various coffee activities (production, value chain process, preparation, export, etc.),
  • Collecting information related to coffee with the aim of establishing a database for pearl of Tehama (in progress),
  • fulfillment field activities, training and guidance for farmers dealing with the company,
  • Providing advice and support the management in making the appropriate decision,
  • Helping in preparing correspondences, monitoring and following-up and public relations.

 

The expansion stage:

At this stage, Mocha Crown was able to get acquainted on the production areas and agrees with many coffee agricultural associations and with distinguished producers of coffee farmers to buy large quantities of the crop, provided that they adhere to the criteria which set by the advisory team starting from crop management and following good agricultural processes and ending with post-harvest treatments and follow the value strategies.

Coffee harvest and post-harvest treatments:

Picking of coffee beans:

Due to the great diversity within the Yemeni coffee varieties, the process of harvesting coffee grains from the fields is done by hand and in a traditional way, whereas farmers are cares to produce the highest quality of the crop. The farmers whom Tehama pearl deals with have high skills and accurate knowledge of practices that allow achieving the highest quality of the crop, which is As follows:

  • The process of picking coffee beans takes place in stages because they do not ripen at one time, but rather the process of harvesting the crop continues for 2-3 months.
  • Whenever the Bean starts to ripen and appears to be light red, the farmers harvest them.
  • Ripe Beans that are harvested simultaneously are dried separately from the Beans which ripped later.
  • Falling Beans are separated so that they do not affect the quality of the coffee, as this type of Bean is usually saturated with humidity.

Drying coffee Beans

The drying process is one of the most important processes that Tehama pearl achieves the most required quality and flavor through it. Drying process is done in a dry method (without washing) and any amount of Beans harvested need a period of 7 – 12 days for drying, which is done naturally under the sun raises in the traditional way.

Pearl of Tehama makes the farmers aware of the following steps and practices in the drying process:

  • After harvesting the crop, the farmers dry it in clean, dry and solid places for a period of one to two weeks.
  • Coffee beans are exposed in the drying places to direct sunlight during the drying period,
  • Good drying of beans takes place in large places to prevent the beans from crowding also to allow air and sun to enter, in order to avoid the fermenting of the coffee due to the existence of humidity and the absence of a good ventilation,
  • The farmers stir the Beans daily in order to ensure the uniformity of the drying process,
  • During the drying process, farmers work to exclude any Beans which color turns into an unacceptable or heterogeneous color.

Preparing coffee for export

In the first stage of Mocha Crown , the preparation of Yemeni coffee for export, in general, was carried out in a traditional way. The peeling process is done using traditional homemade machines and the process of cleaning, sifting and excluding the grains that are not good is done by hand but the automatic graduation process is not done; the different sizes (10-17) are combined together, especially in Sana’ani coffee, which was used by Mocha Crown in the previous period.

After that the process of preparing coffee was developed in a specialized and qualitative way, as it was able to deal with different kinds separately, and it also reached distinct mixes of a group of excellent coffee varieties.

The various process of coffee preparation for export as follows:

Peeling:

The peeling process is done in the dry way as much as possible, whereby the coffee peeling requires soaking the Beans to facilitate the removal of the shells from the nucleus without cutting the husks or breaking the green grains. Mocha Crown

maintains the appropriate humidity in the coffee beans in order to achieve the highest quality and flavor; the peeling process is done using an advanced peeling machine.

Cleaning process

After the peeling process, there will be a lot of remaining husks that have not been cleaned during the peeling process; in addition to that the green coffee beans contain some impurities after peeling. These peeled grains are cleaned with two types of instruments:

Air blower: It is a cleaning machine for dust and light husks

Destoner: It is a machine that prevents the dust and things that do not belong to coffee grains (impurities) such as stones, nails, strings, dust, and husks.

 

Defect coffee bean removal:

This process uses gravity device that excludes shot, diseased, broken and light grains, etc.

Grading:

This process is carried out by a machine called the Grader. Although the Grader can sort the different sizes separately, homogeneous green beans which sized from (7-10)are collected together after this process, in terms of size and density, in preparation for the next process of preparing the crop for marketing, which is the packaging stage. It is notable that most green beans have small sizes, as a result of many reasons related to the variety, climatic conditions and rain irrigation, also the failure to add chemical fertilizers. The following is a comparison between the different varieties in terms of the sizes of green grain.

Sorting:

The grading process by the Grader instrument is not the end of the preparation process. There is still an additional process which is sorting in term of color; there are similar grains in size, shape, density and weight of different sizes, but their colors are different and some of them are black color which is not desirable. These unwanted grains are removed by hand through a group of workers.

It should be noted that pearl of Tehama will buy an instrument for color sorting called Sorter by color

Packaging process:

As known, Mocha Crown exports green grains in freights from 30 – 60 kg according to the demand. To complete the specialized preparation of coffee, the packaging process also takes a good care to preserve the quality of the product and its flavor

and to ensure its arrival in the best form. Coffee is first filled in plastic freights called Ecotact Hermetic bags , which preserve humidity and flavor for several years without change. Then these freights are placed inside white-colored fabric bags which designed to fill the best kinds of coffee (previously, coffee was filled with burlap packages)

Transportation and freightage process:

Mocha Crown cares to do many processes which ensure coffee from smells or dirt that are usually taken by the means of transportation. At first, it cleans the container and then it wraps it from inside before stacking the freights in it.

Mocha Crown exports coffee freights in an amount between 15-20 tons in the container and then sends it from its headquarters in Sana’a to the port of Aden. And there, the arrangements, weights and checks are done on the readiness of the dispatch, the issuance of papers and official permits in addition to the policy of freight.
